Pumpkin Seeds - Cushaw Green-Striped

This is such a versatile and tasty squash! And nutritious! There are many recipes online for how to flavor and spice it when cooking it in a traditional mashed manner. We also made it as a baked dish, both savory and as a sweet dessert. Another way to prepare Cushaw is as muffins with very little added sugar and with whole wheat flour instead of white. We reaped 16 large Cushaw from three plants. By large I mean 15-23 lbs each. There were a few smaller ones, but they weren’t as flavorful. Next year we won’t bother cooking the smaller ones. My husband cut each Cushaw in very large sections with the skin left on. Put them in freezer bags and froze them. Then later removed the amount needed for cooking to thaw. After thawing, he bakes or microwaves the sections until soft. Then he scrapes the Cushaw off the skin. That method is easier than trying to skin them before cooking! We live in Omaha, NE, and found the Cushaw were easy to grow. Every one of them turned out picture perfect with no damage from bugs or diseases, even with sitting on very wet soil and grass until late October when we cut them. We will be planting them again this year.

Pumpkin Seeds - Cushaw Green-Striped

I planted three of these in my garden and only one came up a cushaw. The other two were some sort of large, green, ridged squash we'd never seen before and couldn't find on the internet. They took over my garden and had to be cut out. I did save the seeds from the 3 cushaw we got to try again next year. They did make great pies. I also chunk them and bake with olive oil, salt and pepper and cumin. Delicious.

Pumpkin Seeds - Cushaw Green-Striped

These pumpkins make a pretty display when mixed with other types of pumpkins. A good cooking pumpkin but I like them best when mixed with pulp from sugar pumpkins.
