A cool-season vegetable and Brassica bursting with nutrition, organic kale is easy to grow and can be harvested in as little as a month after sowing. Start seeds indoors four to six weeks before the last frost, or direct sow seeds immediately after. Choose a planting site that drains well and gets partial to full sun. Space seedlings about a foot apart to allow enough room for mature plants to reach their potential height. Full-grown leaves vary from 12 to 30 inches long, depending on the variety. Be sure to buy a few extra seeds and plan to sow succession plantings every three weeks to ensure consistent harvests of this kitchen staple.
